Ingredients
- 1 cup of water
- 1/2 cup of unsalted butter
- 1/4 teaspoon of salt
- 1 cup of all-purpose flour
- 4 eggs
- 1 teaspoon of vanilla extract
- Oil for frying
- 1/2 cup of chocolate chips
Instructions
- In a saucepan, bring 1 cup of water and 1/2 cup of unsalted butter to a boil. Add 1/4 teaspoon of salt and stir until the butter is melted.
- Reduce the heat to low and add 1 cup of all-purpose flour. Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
- Remove the pan from the heat and let it cool for 5 minutes. Then, add 4 eggs one at a time, beating well after each addition. Stir in 1 teaspoon of vanilla extract.
- In a large, heavy-bottomed pot, heat 2 inches of oil to 360°F (180°C). Drop the dough by spoonfuls into the hot oil and fry until golden brown, about 3-4 minutes per side. Drain on paper towels.
- In a microwave-safe bowl, melt 1/2 cup of chocolate chips in 30-second intervals, stirring in between, until smooth.
- Drizzle the melted chocolate over the warm beignets and serve immediately.
