- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 large sweet potatoes, peeled and cut into 1-inch cubes
- 2 cups carrots, sliced
- 1 cup frozen peas
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium-high heat.
- Add the beef stew meat and brown on all sides, about 5 minutes.
- Add the chopped onion and minced garlic, and cook for an additional 2 minutes.
- Pour in the beef broth and red wine, then add the bay leaves, dried thyme, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1 hour.
- Add the sweet potatoes and carrots to the pot, and continue to simmer for an additional 30 minutes, or until the beef and vegetables are tender.
- Stir in the frozen peas and cook for another 5 minutes until heated through.
- Taste and adjust seasoning if necessary.
- Remove the bay leaves before serving.
