Spicy Beef Shank Soup

Ingredients
- 2 lbs beef shank, cut into chunks
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 jalapeno pepper, diced
- 1 can (14 oz) diced tomatoes
- 8 cups beef broth
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat 2 tbsp of olive oil over medium-high heat.
- Add the beef shank chunks and brown on all sides, about 5 minutes.
- Add the chopped onion, minced garlic, sliced carrots, sliced celery, and diced jalapeno pepper to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in the diced tomatoes, beef broth, cayenne pepper, paprika, and cumin. Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 2.5 to 3 hours, or until the beef shank is tender.
- Taste and adjust seasoning if needed.
