Instructions

  • In a large pot, heat 2 tbsp of olive oil over medium-high heat.
  • Add the beef shank chunks and brown on all sides, about 5 minutes.
  • Add the chopped onion, minced garlic, sliced carrots, sliced celery, and diced jalapeno pepper to the pot. Cook for another 5 minutes, stirring occasionally.
  • Stir in the diced tomatoes, beef broth, cayenne pepper, paprika, and cumin. Season with salt and pepper to taste.
  • Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 2.5 to 3 hours, or until the beef shank is tender.
  • Taste and adjust seasoning if needed.
