Instructions

  • Add the beef shank chunks and brown on all sides, about 5 minutes.

  • Pour in the beef broth and bring to a boil.
  • Reduce heat to low, cover, and simmer for 1.5 hours, stirring occasionally.
  • Add the sliced carrots, celery, bay leaves, and dried thyme to the pot.
  • Continue to simmer for another 1 hour until the beef is tender and the vegetables are soft.
  • Stir in the lemon juice and zest, then season with salt and pepper to taste.
  • Simmer for an additional 10 minutes to allow the flavors to meld.
  • Remove the bay leaves and discard.
  • Serve the lemon beef shank soup hot, garnished with fresh parsley if desired.
