- 2 lbs beef shank, cut into chunks

- 2 celery stalks, sliced

- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat 2 tbsp of olive oil over medium-high heat.
- Add the beef shank chunks and brown on all sides, about 5 minutes.
- Add the chopped onion and minced garlic, sauté for 2-3 minutes until fragrant.
- Pour in the beef broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 1.5 hours, stirring occasionally.
- Add the sliced carrots, celery, bay leaves, and dried thyme to the pot.
- Continue to simmer for another 1 hour until the beef is tender and the vegetables are soft.
- Stir in the lemon juice and zest, then season with salt and pepper to taste.
- Simmer for an additional 10 minutes to allow the flavors to meld.
- Remove the bay leaves and discard.
- Serve the lemon beef shank soup hot, garnished with fresh parsley if desired.
