Ingredients
- 2 lbs beef heart, trimmed and cut into 1-inch cubes
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 jalapeno peppers, seeded and diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 2 tsp cumin
- 2 tsp paprika
- 1 tsp cayenne pepper
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup chopped fresh cilantro
Instructions
- In a large pot, heat 2 tbsp of vegetable oil over medium-high heat.
- Add the beef heart cubes and brown on all sides, about 5 minutes.
- Remove the beef from the pot and set aside.
- In the same pot, add the chopped onion, minced garlic, and diced jalapeno peppers. Cook until the onions are translucent, about 5 minutes.
- Stir in the diced tomatoes, beef broth, cumin, paprika, cayenne pepper, salt, and black pepper.
- Return the browned beef heart to the pot and bring the stew to a boil.
- Reduce the heat to low, cover, and simmer for 1.5 hours, or until the beef heart is tender.
- Stir in the chopped cilantro and let the stew simmer for an additional 5 minutes.
- Taste and adjust seasoning if necessary.
- Serve the spicy beef heart stew hot, with crusty bread or rice.
