Ingredients
- 1 pound of flank steak, sliced into thin strips
- 2 tablespoons of vegetable oil
- 1 large onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 2 cloves of garlic, minced
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of fresh lime juice
- 8 small flour tortillas
- Optional toppings: sour cream, guacamole, shredded cheese, salsa
Instructions
- In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the sliced onions and peppers to the skillet and cook, stirring occasionally, until they are caramelized and tender, about 10-12 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil and heat over medium-high heat.
- Add the sliced flank steak to the skillet and cook for 3-4 minutes, stirring occasionally, until the beef is browned and cooked through.
- Add the minced garlic, chili powder, cumin, paprika, salt, and black pepper to the skillet with the beef. Cook for an additional 1-2 minutes, stirring to combine the spices with the beef.
- Return the caramelized onions and peppers to the skillet with the beef. Pour the fresh lime juice over the mixture and stir to combine. Cook for another 2-3 minutes to heat everything through.
- Warm the flour tortillas in a separate skillet or in the microwave according to package instructions.
- To serve, spoon the beef and caramelized onion and pepper mixture onto the warm tortillas. Add optional toppings such as sour cream, guacamole, shredded cheese, and salsa if desired.
