Beef Biryani

Ingredients
- 2 cups basmati rice
- 1 pound beef, cut into cubes
- 1 large onion, thinly sliced
- 1/2 cup plain yogurt
- 2 tomatoes, chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 green chilies, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint leaves, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/4 teaspoon garam masala
- 4 cups water
- 1/4 cup ghee or vegetable oil
- Salt to taste
Instructions
- Wash the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
- In a large pot, heat the ghee or vegetable oil over medium heat. Add the cumin seeds and sauté until they start to sizzle.
- Add the sliced onions and cook until they turn golden brown.
- Add the beef cubes and cook until they are browned on all sides.
- Stir in the minced garlic, grated ginger, and chopped green chilies. Cook for 2 minutes.
- Add the chopped tomatoes, coriander powder, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and the spices are fragrant.
- In a separate bowl, mix the plain yogurt with garam masala, chopped cilantro, and chopped mint leaves. Add this mixture to the pot and stir well to combine.
- Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 30 minutes or until the beef is tender.
- In a separate large pot, bring 8 cups of water to a boil. Add the soaked and drained rice, along with 1 tablespoon of salt. Cook the rice for 5-6 minutes, then drain and set aside.
- Layer the cooked beef and rice in a large, heavy-bottomed pot. Start with a layer of rice, followed by a layer of beef, and continue until all the rice and beef are used up. Cover the pot with a tight-fitting lid.
- Place the pot over low heat and cook for 20-25 minutes, or until the rice is fully cooked and the flavors have melded together.
