Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 1 can (14.5 oz) diced tomatoes
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish.
- In a large skillet, cook 1 pound of ground beef over medium heat until browned. Drain any excess fat.
- Add the chopped onion, green bell pepper, and minced garlic to the skillet. Cook for 5 minutes, until the vegetables are softened.
- Stir in 1 cup of long-grain white rice, diced tomatoes, condensed cream of mushroom soup, beef broth, Worcestershire sauce, dried thyme, salt, and black pepper. Bring to a simmer and cook for 5 minutes.
- Transfer the beef and rice mixture to the prepared baking dish. Cover with foil and bake for 45 minutes.
- Remove the foil, sprinkle 1 cup of shredded cheddar cheese over the casserole, and bake for an additional 10 minutes, until the cheese is melted and bubbly.
