Beef and Potato Casserole

Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups potatoes, peeled and sliced
- 1 cup cheddar cheese, shredded
- 1 cup beef broth
- 1/2 cup milk
- 2 tablespoons flour
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375 degrees F. Grease a 9x13 inch baking dish.
- In a large skillet, cook 1 pound of ground beef over medium heat until browned. Add the chopped onion and minced garlic, and cook until the onion is soft.
- In a small saucepan, melt 2 tablespoons of butter over medium heat. Stir in 2 tablespoons of flour to make a roux. Gradually whisk in 1 cup of beef broth and 1/2 cup of milk. Cook and stir until thickened, then season with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
- Layer half of the sliced potatoes in the bottom of the prepared baking dish. Spread the beef and onion mixture over the potatoes. Pour the sauce over the beef layer. Sprinkle with half of the shredded cheddar cheese. Repeat the layers with the remaining potatoes and cheese.
- Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and continue baking for an additional 15 minutes, or until the potatoes are tender and the casserole is bubbly and golden brown.
- Allow to cool for 5 minutes before serving. Enjoy!
