Instructions

  • Preheat a panini press or a large skillet over medium heat.
  • In a small bowl, mix together 1/4 cup of mayonnaise and 2 tablespoons of Dijon mustard.
  • Lay out 4 slices of sourdough bread and spread the mayonnaise mixture on each slice.
  • Divide the thinly sliced roast beef evenly among the 4 slices of bread.
  • Top the roast beef with the shredded cheddar cheese, then place the remaining 4 slices of sourdough bread on top to form sandwiches.
  • Spread 1/2 tablespoon of butter on the top of each sandwich.
  • Place the sandwiches in the preheated panini press or skillet, buttered side down.
  • Spread the remaining 1/2 tablespoon of butter on the top of each sandwich.
  • Close the panini press and cook for 3-4 minutes, or if using a skillet, use a spatula to press down on the sandwiches and cook for 2-3 minutes on each side until the bread is golden brown and the cheese is melted.
  • Remove the panini from the press or skillet, slice in half, and serve hot.
