Beef and Broccoli Stir-Fry

Ingredients
- 1 lb flank steak, thinly sliced
- 1/2 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2 tbsp cornstarch
- 1/4 cup water
- 3 cups broccoli florets
- 2 tbsp vegetable oil
- 1/2 tsp sesame oil
- Cooked rice, for serving
Instructions
- In a small bowl, mix together 1/2 cup of low-sodium soy sauce, 1/4 cup of brown sugar, 2 cloves of minced garlic, and 1 teaspoon of grated fresh ginger. Set aside.
- In another small bowl, dissolve 2 tablespoons of cornstarch in 1/4 cup of water. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced flank steak and stir-fry for 2-3 minutes, or until browned. Remove the beef from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil. Add 3 cups of broccoli florets and stir-fry for 2-3 minutes, or until the broccoli is bright green and tender-crisp.
- Return the cooked beef to the skillet with the broccoli. Pour the soy sauce mixture over the beef and broccoli. Stir well.
- Stir the cornstarch mixture to recombine, then pour it into the skillet. Cook, stirring constantly, for 1-2 minutes or until the sauce has thickened.
- Drizzle 1/2 teaspoon of sesame oil over the beef and broccoli stir-fry and toss to combine.
- Serve the beef and broccoli stir-fry over cooked rice. Enjoy!
