Bee cake, also known as "abejas reina" in Spanish, is a traditional dessert hailing from the Canary Islands. This delectable treat is a sweet, moist cake made with honey, almonds, and a hint of lemon zest, giving it a unique and delightful flavor. The history of bee cake dates back to the Canary Islands, where it was originally created by skilled local bakers using the finest honey and almonds from the region. Today, the best versions of this dessert can still be found in the Canary Islands, particularly in Tenerife and Gran Canaria. The key to a perfect bee cake lies in the quality of honey and almonds used, as well as the precise balance of flavors. For a unique twist, some chefs incorporate a touch of local rum or spices to elevate the taste. Whether enjoyed as a dessert or with a cup of coffee, bee cake is a delightful indulgence that captures the essence of the Canary Islands' culinary heritage.
