Instructions

  • Season the beef chuck roast with salt and pepper, then place it in a slow cooker. Pour the BBQ sauce over the roast, cover, and cook on low for 8 hours or on high for 4 hours, until the beef is tender and easily pulls apart with a fork.
  • While the beef is cooking, caramelize the onions. In a large skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and golden brown, about 20-25 minutes. Set aside.
  • Once the beef is done, remove it from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and stir it in the BBQ sauce to coat.
  • To assemble the grilled cheese sandwiches, preheat a skillet over medium heat. Butter one side of each slice of bread. Place a slice of bread, buttered side down, in the skillet. Add a slice of cheddar cheese, a generous amount of the BBQ pulled beef, a spoonful of caramelized onions, and another slice of cheddar cheese. Top with another slice of bread, buttered side up.
  • Cook the sandwiches for 3-4 minutes on each side, until the bread is golden brown and the cheese is melted.
