- 2 cans of young green jackfruit in brine, drained and rinsed
- 1 tablespoon olive oil

- 3 cloves garlic, minced

- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 8 small corn tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1 avocado, sliced
- 1 lime, cut into wedges
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3 minutes.
- Add the minced garlic to the skillet and cook for an additional 1 minute.
- Add the drained and rinsed jackfruit to the skillet, and use a fork to break it apart into shreds.
