Ingredients
- 1 lb ground turkey
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tbsp olive oil
- 2 onions, thinly sliced
- 8 oz mushrooms, chopped
- 1/4 cup BBQ sauce
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together 1 lb ground turkey, 1 cup breadcrumbs, 1/2 cup milk, 1 egg, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, and 1/2 tsp onion powder until well combined.
- In a skillet, heat 1 tbsp olive oil over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until caramelized, about 15-20 minutes. Remove the onions from the skillet and set aside.
- In the same skillet, add the chopped mushrooms and cook until they are golden brown and all the liquid has evaporated, about 8-10 minutes. Remove from heat and let cool slightly.
- Line a loaf pan with parchment paper. Press half of the turkey mixture into the bottom of the pan, creating a well in the center.
- Spread the caramelized onions and mushrooms into the well, then cover with the remaining turkey mixture, pressing down to seal the edges.
- Bake in the preheated oven for 45 minutes.
- Remove the meatloaf from the oven and brush the top with 1/4 cup of BBQ sauce. Return to the oven and bake for an additional 10-15 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for 10 minutes before slicing and serving. Enjoy!
