Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine 1.5 lbs ground turkey, 1/2 cup breadcrumbs, 1/4 cup finely chopped onion, 1/4 cup finely chopped green bell pepper, 1 egg, 1/4 cup milk, 1 tsp garlic powder, 1 tsp paprika, 1/2 tsp salt, and 1/4 tsp black pepper. Mix until well combined.
  • Transfer the turkey mixture to a greased loaf pan and shape into a loaf.
  • In a small bowl, mix 1/2 cup ketchup, 2 tbsp brown sugar, 1 tbsp apple cider vinegar, and the finely chopped chipotle peppers in adobo sauce. Brush half of the glaze over the meatloaf.
  • Bake the meatloaf in the preheated oven for 45 minutes.
  • Remove the meatloaf from the oven and brush the remaining glaze over the top.
  • Return the meatloaf to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 165°F (74°C).
  • Let the meatloaf rest for 10 minutes before slicing and serving. Enjoy!
