Instructions

  • In a food processor, combine 2 cups of fresh basil leaves, 1/2 cup of walnuts, 3 cloves of garlic, and 1/2 cup of grated Parmesan cheese. Pulse until finely chopped.
  • With the food processor running, slowly pour in 1/2 cup of olive oil until the mixture is smooth and well combined. Season with salt and pepper to taste.
  • Preheat the grill or grill pan over medium-high heat. Season 4 boneless, skinless chicken breasts with salt and pepper.
  • Grill the chicken for 6-7 minutes on each side, or until cooked through and no longer pink in the center.
  • Remove the chicken from the grill and let it rest for a few minutes. Then, spoon the basil walnut pesto over the top of each chicken breast.
  • Serve the basil walnut pesto chicken with your favorite side dishes and enjoy!
