- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 8 oz seitan, sliced
- 4 cups mixed greens (kale, spinach, chard)

- Add the sliced seitan to the skillet and cook for 5-7 minutes, stirring occasionally, until lightly browned.
- Add the mixed greens to the skillet and cook for an additional 2-3 minutes until wilted. Season with soy sauce, sesame oil, salt, and pepper to taste.
- Divide the cooked barley among 4 bowls, and top each with the seitan and sautéed greens mixture.
- Serve hot and enjoy!
The barley bowl with seitan and sautéed greens has a rich history dating back to ancient times, with barley being one of the oldest cultivated grains. This hearty and nutritious dish has been enjoyed in various cultures around the world, from the Mediterranean to the Middle East. Chefs and home cooks have put their own unique spin on the recipe, incorporating local flavors and ingredients. In recent years, this dish has gained popularity in the plant-based and vegan food movements, with many restaurants and cafes offering their own versions. The chewy texture of the barley, the savory seitan, and the vibrant sautéed greens create a harmonious balance of flavors and textures. One renowned version of this dish can be found in a cozy vegan bistro in Portland, Oregon, where the chef sources the freshest local greens and prepares the seitan in-house, resulting in a truly exceptional barley bowl. The key to getting this dish right lies in the perfect balance of seasoning and the careful cooking of the seitan to achieve a tender yet meaty texture. For those looking to explore alternative methods, some chefs have experimented with adding a touch of smokiness to the seitan or incorporating unique spices into the sautéed greens, elevating the dish to new heights. Whether enjoyed at a trendy urban eatery or prepared at home with a personal touch, the barley bowl with seitan and sautéed greens continues to captivate food enthusiasts with its wholesome and satisfying appeal.
