  • Add the sliced seitan to the skillet and cook for 5-7 minutes, stirring occasionally, until lightly browned.
  • Add the mixed greens to the skillet and cook for an additional 2-3 minutes until wilted. Season with soy sauce, sesame oil, salt, and pepper to taste.
  • Divide the cooked barley among 4 bowls, and top each with the seitan and sautéed greens mixture.
