Created by: Howcan Team
Ingredients
- 1 cup barley
- 4 salmon fillets
- 1 bunch asparagus, trimmed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 lemon, sliced
- Fresh parsley for garnish
Instructions
- In a medium saucepan, bring 3 cups of water to a boil. Add 1 cup of barley, reduce heat to low, cover, and simmer for 30 minutes or until tender. Drain any excess water and set aside.
- Preheat grill to medium-high heat. Season salmon fillets with garlic powder, paprika, salt, and pepper. Drizzle with olive oil and place on the grill. Cook for 4-5 minutes on each side or until the salmon is cooked through and has grill marks. Remove from heat and set aside.
- Preheat the oven to 400°F. Place the trimmed asparagus on a baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat. Roast in the oven for 12-15 minutes or until the asparagus is tender and slightly charred.
- To assemble the bowls, divide the cooked barley among 4 bowls. Top each with a grilled salmon fillet and roasted asparagus. Garnish with fresh parsley and a slice of lemon. Serve and enjoy!
