Ingredients
- 1 pound of large shrimp, peeled and deveined
- 1/2 cup of mayonnaise
- 1/4 cup of Thai sweet chili sauce
- 1 tablespoon of Sriracha sauce
- 1/2 cup of cornstarch
- 1/4 cup of buttermilk
- 1 cup of vegetable oil for frying
- 2 green onions, thinly sliced
- 1 tablespoon of chopped fresh cilantro
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
- In a small bowl, mix together 1/2 cup of mayonnaise, 1/4 cup of Thai sweet chili sauce, and 1 tablespoon of Sriracha sauce. Set aside.
- In a separate bowl, combine 1/2 cup of cornstarch, 1/4 cup of buttermilk, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir until smooth.
- Heat 1 cup of vegetable oil in a large skillet over medium-high heat.
- Dip each shrimp into the cornstarch mixture, coating evenly, and then carefully place them into the hot oil. Fry for 2-3 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
- In a large bowl, toss the fried shrimp with the prepared sauce until evenly coated.
- Garnish with sliced green onions and chopped cilantro before serving.
