Ingredients
- 2 ripe bananas, mashed
- 2 eggs
- 1/4 cup protein powder
- 1/4 cup almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 2 tablespoons coconut oil or butter, for cooking
Instructions
- In a large bowl, combine the mashed bananas, eggs, protein powder, almond flour, baking powder, cinnamon, salt, milk, and vanilla extract. Mix until well combined.
- Heat a non-stick skillet or griddle over medium heat and add 1/2 tablespoon of coconut oil or butter.
- Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface. Flip and cook for an additional 2-3 minutes, or until golden brown.
- Repeat with the remaining batter, adding more coconut oil or butter to the skillet as needed.
- Serve the pancakes warm with your favorite toppings such as sliced bananas, berries, maple syrup, or a dollop of Greek yogurt.
