Instructions

  • In a large skillet, melt 1/4 cup of unsalted butter over medium heat.
  • Add 4 ripe bananas, sliced, and cook for 2 minutes, stirring gently.
  • Sprinkle 1/2 cup of brown sugar over the bananas and continue to cook, stirring occasionally, until the sugar is completely melted and the bananas are caramelized, about 3-4 minutes.
  • Carefully add 1/4 cup of dark rum to the skillet and allow it to warm for a few seconds.
  • Using a long lighter, carefully ignite the rum to flambe the bananas. Let the flames die down.
  • Sprinkle 1/2 teaspoon of ground cinnamon and 1/4 teaspoon of ground nutmeg over the bananas, and stir gently to combine.
  • Divide the banana foster among 4 serving dishes, and top each with a scoop of vanilla bean ice cream.
