Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder

- 1/2 cup unsalted butter, softened

- 2 large eggs
- 3 ripe bananas, mashed
- 1/3 cup sour cream
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
- In a separate large bowl, cream together 1/2 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy.
- Beat in 2 large eggs, one at a time, then stir in the mashed bananas, 1/3 cup of sour cream, and 1 teaspoon of vanilla extract.
- Gradually add the dry ingredients into the wet ingredients, mixing until just combined. Be careful not to overmix.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Allow the banana bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
