Instructions

  • Preheat the oven to 375°F (190°C).
  • In a small bowl, mix together 1/2 cup breadcrumbs, 1/4 cup grated Parmesan cheese, 2 cloves minced garlic, 1/4 cup chopped fresh parsley, and salt and pepper to taste.
  • Using a sharp knife, make a pocket in each pork chop by cutting horizontally into the side of the chop, being careful not to cut all the way through.
  • Stuff each pork chop with the breadcrumb mixture, pressing down gently to pack the filling in.
  • In a small saucepan, combine 1/4 cup balsamic vinegar and 2 tablespoons honey. Bring to a simmer over medium heat and cook for 5-7 minutes, or until the glaze has thickened slightly.
  • Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed pork chops for 2-3 minutes on each side, or until golden brown.
  • Brush the balsamic glaze over the pork chops, then transfer the skillet to the preheated oven.
  • Bake for 15-20 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
