Instructions

  • Gradually add 1/4 cup of vegetable oil and 1/2 cup of warm water to the flour mixture, kneading until a smooth dough forms.
  • Divide the dough into 4 equal portions and roll each portion into a ball. Flatten each ball into a 1/4-inch thick tortilla.
  • Heat a non-stick skillet over medium heat and cook each tortilla for 1-2 minutes on each side, or until lightly browned and cooked through.
  • Spread 1/4 cup of refried beans on one half of each tortilla, then sprinkle 1/4 cup of crumbled queso fresco or feta cheese over the beans.
