Ingredients
- 2 cups of all-purpose flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1/4 cup of vegetable oil
- 1/2 cup of warm water
- 1 cup of refried beans
- 1 cup of crumbled queso fresco or feta cheese
- 1 cup of sour cream or crema
Instructions
- In a large bowl, combine 2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
- Gradually add 1/4 cup of vegetable oil and 1/2 cup of warm water to the flour mixture, kneading until a smooth dough forms.
- Divide the dough into 4 equal portions and roll each portion into a ball. Flatten each ball into a 1/4-inch thick tortilla.
- Heat a non-stick skillet over medium heat and cook each tortilla for 1-2 minutes on each side, or until lightly browned and cooked through.
- Spread 1/4 cup of refried beans on one half of each tortilla, then sprinkle 1/4 cup of crumbled queso fresco or feta cheese over the beans.
- Fold the tortillas in half to enclose the filling and cook for an additional 1-2 minutes, or until the cheese is melted and the baleadas are heated through.
- Serve the baleadas with a dollop of sour cream or crema on top, and enjoy!
