Baklava Cheesecake

Ingredients
- 1 cup of crushed walnuts
- 1 cup of crushed pistachios
- 1/2 cup of sugar
- 1 teaspoon of ground cinnamon
- 1/2 cup of melted butter
- 1 package of phyllo dough
- 16 ounces of cream cheese
- 1/2 cup of sugar
- 1 teaspoon of vanilla extract
- 3 eggs
- 1/4 cup of honey
- 1/4 cup of water
Instructions
- Preheat the oven to 350 degrees F.
- In a bowl, mix 1 cup of crushed walnuts, 1 cup of crushed pistachios, 1/2 cup of sugar, and 1 teaspoon of ground cinnamon.
- Brush a 9x13 inch baking dish with melted butter. Layer 10 sheets of phyllo dough, brushing each sheet with melted butter before adding the next.
- Spread half of the nut mixture over the phyllo dough. Layer 5 more sheets of phyllo dough, brushing each sheet with melted butter.
- In a separate bowl, beat 16 ounces of cream cheese, 1/2 cup of sugar, and 1 teaspoon of vanilla extract until smooth. Add 3 eggs, one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the top of the phyllo dough and nut layers. Spread the remaining nut mixture on top.
- Layer the remaining phyllo dough sheets on top, brushing each sheet with melted butter.
- Using a sharp knife, cut the baklava cheesecake into diamond or square shapes before baking.
- Bake for 50-60 minutes, or until the phyllo dough is golden brown and the cheesecake is set.
- While the baklava cheesecake is baking, combine 1/4 cup of honey and 1/4 cup of water in a small saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes.
- Once the baklava cheesecake is done, drizzle the honey syrup over the top.
