Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, mix together 1/4 cup of softened butter, 2 tablespoons of chopped fresh dill, and a pinch of salt and pepper.
  • Place the salmon fillets on a baking sheet lined with parchment paper. Spread the dill butter evenly over the top of each fillet.
  • Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
  • While the salmon is baking, heat 1 tablespoon of olive oil in a small saucepan over medium heat. Add 2 cloves of minced garlic and sauté for 1-2 minutes until fragrant.
  • Pour in 1/2 cup of chicken broth, 2 tablespoons of capers, and the juice and zest of 1 lemon. Simmer for 5-7 minutes, or until the sauce has reduced slightly.
  • Once the salmon is done, transfer the fillets to serving plates and spoon the lemon caper sauce over the top.
  • Garnish with additional fresh dill and lemon slices if desired, and serve hot. Enjoy!
