Instructions

  • Rinse the quinoa under cold water and drain well.
  • In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork and set aside.
  • Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt, pepper, and garlic powder.
  • Place a slice of lemon on top of each salmon fillet.
  • Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
