Ingredients
- 4 Mahi-Mahi fillets (6 oz each)
- 1 cup wild rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 lemon, juiced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse the wild rice under cold water and drain.
- In a medium saucepan, bring the chicken broth to a boil. Add the wild rice, reduce heat to low, cover, and simmer for 45 minutes or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, prepare the Mahi-Mahi. Place the fillets in a baking dish and drizzle with olive oil and lemon juice. Sprinkle with minced garlic, dried thyme, salt, and pepper.
- Bake the Mahi-Mahi in the preheated oven for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
- Once the rice and fish are done, divide the wild rice among 4 plates and top with a baked Mahi-Mahi fillet. Garnish with fresh parsley and serve hot.
