Ingredients
- 4 halibut fillets (6 oz each)
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh chives
- 1/4 cup melted butter
- Salt and pepper to taste
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 1/4 cup white wine
- 1/4 cup chicken broth
- 2 tablespoons lemon juice
- 2 tablespoons cold butter, cubed
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together 1/2 cup panko breadcrumbs, 1/4 cup grated Parmesan cheese, 2 tablespoons chopped fresh parsley, 1 tablespoon chopped fresh dill, 1 tablespoon chopped fresh chives, and 1/4 cup melted butter to create the herb crust.
- Season the halibut fillets with salt and pepper, then coat them in 1/4 cup all-purpose flour, shaking off any excess.
- Place the coated halibut fillets on a baking sheet lined with parchment paper. Press the herb crust mixture onto the top of each fillet to form a thick coating.
- Drizzle 2 tablespoons of olive oil over the herb-crusted halibut fillets.
