Parmesan Crusted Baked Cod with Garlic Butter Sauce

Ingredients
- 4 cod fillets (6 oz each)
- 1/2 cup grated parmesan cheese
- 1/4 cup panko breadcrumbs
- 2 tablespoons melted butter
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 2 tablespoons lemon juice
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a shallow dish, combine 1/2 cup grated parmesan cheese, 1/4 cup panko breadcrumbs, 1 teaspoon garlic powder, 1/2 teaspoon paprika, and salt and pepper to taste.
- Brush 4 cod fillets with 2 tablespoons of melted butter, then coat them in the parmesan mixture, pressing gently to adhere. Place the coated fillets on the prepared baking sheet.
- Bake the cod in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
- While the cod is baking, heat 2 tablespoons of olive oil in a skillet over medium heat. Add 4 cloves of minced garlic and sauté for 1-2 minutes, until fragrant.
- Pour in 1/2 cup of chicken broth and 2 tablespoons of lemon juice. Simmer for 3-4 minutes, then stir in 2 tablespoons of chopped fresh parsley. Season the garlic butter sauce with salt and pepper to taste.
- Serve the baked cod with the garlic butter sauce drizzled on top. Enjoy!
