Ingredients
- 8 boneless chicken thighs
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together 1/4 cup Dijon mustard, 1/4 cup honey, 2 tablespoons soy sauce, 2 cloves minced garlic, 1 teaspoon paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Place the boneless chicken thighs in a large resealable plastic bag and pour in half of the honey mustard mixture. Seal the bag and massage the marinade into the chicken. Let it marinate in the refrigerator for at least 30 minutes.
- Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Remove the chicken from the marinade and discard the excess marinade. Place the chicken thighs in the skillet and cook for 3-4 minutes on each side, until browned.
- Brush the remaining honey mustard mixture over the chicken thighs.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the glaze is caramelized.
- Remove from the oven and let the chicken rest for 5 minutes before serving. Enjoy!
