Ingredients
- 4 fillets of arctic char (6 oz each)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 pound mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- Place the arctic char fillets on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and season with 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of paprika.
- In a bowl, toss the mixed vegetables with the remaining 1 tablespoon of olive oil, balsamic vinegar, dried thyme, red pepper flakes, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Spread the seasoned vegetables on a separate baking sheet.
- Place both baking sheets in the preheated oven and bake for 20-25 minutes, or until the arctic char is cooked through and the vegetables are tender and slightly caramelized.
- Once done, remove from the oven and sprinkle the roasted vegetables with chopped fresh parsley.
