Instructions

  • In a bowl, toss the mixed vegetables with the remaining 1 tablespoon of olive oil, balsamic vinegar, dried thyme, red pepper flakes, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Spread the seasoned vegetables on a separate baking sheet.
  • Place both baking sheets in the preheated oven and bake for 20-25 minutes, or until the arctic char is cooked through and the vegetables are tender and slightly caramelized.
  • Once done, remove from the oven and sprinkle the roasted vegetables with chopped fresh parsley.
