Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup of spinach
- 1/2 cup of sun-dried tomatoes, chopped
- 1/2 cup of feta cheese
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- Salt and pepper to taste
- 8 slices of bacon
Instructions
- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
- In a bowl, mix together 1 cup of spinach, 1/2 cup of sun-dried tomatoes, 1/2 cup of feta cheese, 1 teaspoon of garlic powder, and 1 teaspoon of paprika. Season with salt and pepper to taste.
- Place each chicken breast between two sheets of plastic wrap and pound to 1/4-inch thickness using a meat mallet or rolling pin.
- Divide the spinach and feta mixture evenly among the chicken breasts, spreading it over each one. Roll up the chicken breasts, tucking in the sides, to enclose the filling.
- Wrap 2 slices of bacon around each stuffed chicken breast, securing with toothpicks if necessary.
- Place the bacon-wrapped stuffed chicken breasts on the prepared baking sheet and bake for 25-30 minutes, or until the chicken is cooked through and the bacon is crispy.
- Remove the toothpicks before serving. Enjoy!
