  • Place each chicken breast between two sheets of plastic wrap and pound to 1/4-inch thickness using a meat mallet or rolling pin.
  • Divide the spinach and feta mixture evenly among the chicken breasts, spreading it over each one. Roll up the chicken breasts, tucking in the sides, to enclose the filling.
  • Wrap 2 slices of bacon around each stuffed chicken breast, securing with toothpicks if necessary.
