Ingredients
- 6 slices of bacon, chopped
- 1 large onion, thinly sliced
- 8 large eggs
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- In a large oven-safe skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
- Add the sliced onions to the skillet with the bacon fat and cook over medium-low heat, stirring occasionally, until the onions are caramelized and golden brown, about 15-20 minutes. Remove the onions from the skillet and set aside.
- Preheat the broiler in your oven.
- In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
- Heat the olive oil in the same skillet over medium heat. Pour the egg mixture into the skillet and cook for 3-4 minutes, lifting the edges with a spatula to let the uncooked eggs flow underneath, until the eggs are mostly set but still slightly runny on top.
- Sprinkle the caramelized onions, crispy bacon, and shredded cheddar cheese evenly over the top of the frittata.
- Place the skillet under the broiler and broil for 3-4 minutes, or until the frittata is set and the cheese is melted and bubbly.
- Carefully remove the skillet from the oven (remember, the handle will be hot!) and let the frittata cool for a few minutes before slicing and serving.
