  • Using a sharp knife, cut a pocket into the side of each chicken breast. Be careful not to cut all the way through.
  • Season the inside of each chicken breast with salt and pepper.
  • Stuff each chicken breast with 2 slices of bacon and 1/4 cup of cheddar cheese, pressing the edges to seal the pocket.
  • In a small bowl, whisk together the honey and Dijon mustard to make the glaze.
  • Place the stuffed chicken breasts in the prepared baking dish and brush the honey mustard glaze over the top of each breast.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the bacon is crispy.
  • Remove from the oven and let the chicken rest for 5 minutes before serving.
