Ingredients
- 4 slices of bacon, chopped
- 4 large eggs
- 1/4 cup of milk
- 1/2 cup of shredded cheddar cheese
- Salt and pepper to taste
- 2 tablespoons of chopped chives (optional)
Instructions
- In a large non-stick skillet, cook 4 slices of chopped bacon over medium heat until crispy, about 5-7 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain excess grease.
- In a medium bowl, whisk together 4 large eggs, 1/4 cup of milk, and a pinch of salt and pepper.
- Pour the egg mixture into the skillet with the bacon grease. Cook over medium heat, stirring gently with a spatula, until the eggs begin to set but are still slightly runny, about 2-3 minutes.

- Divide the scramble between two plates and serve immediately.
