  • 1 cup of shredded lettuce
  • 1/2 cup of chopped tomatoes
  • 1/4 cup of chopped cilantro
  • 1/2 cup of crumbled queso fresco
  • 1/4 cup of sour cream
  • 1/4 cup of chipotle peppers in adobo sauce
  • 1/4 cup of mayonnaise
  • 1 tbsp of lime juice

  • 1/4 cup of mayonnaise
  • 1 tbsp of lime juice

Instructions

  • In a small bowl, mix together 1/4 cup of chipotle peppers in adobo sauce, 1/4 cup of mayonnaise, and 1 tbsp of lime juice to make the spicy chipotle sauce. Set aside.
  • In a large skillet, heat 1 tbsp of vegetable oil over medium-high heat. Add the chopped onion and minced garlic, and cook until softened.
  • Add the thinly sliced flank steak to the skillet, and season with 1 tsp of ground cumin, 1 tsp of chili powder, 1/2 tsp of salt, and 1/4 tsp of black pepper. Cook until the steak is browned and cooked through.
  • Warm the corn tortillas in a separate skillet or in the microwave until soft and pliable.
  • To assemble the tacos, place a spoonful of the cooked steak mixture onto each tortilla. Top with shredded lettuce, chopped tomatoes, chopped cilantro, crumbled queso fresco, and a dollop of sour cream.
