Ingredients
- 1 1/2 sleeves of saltine crackers
- 1/3 cup of sugar
- 1/2 cup of unsalted butter, melted
- 4 large egg yolks
- 1 can (14 ounces) of sweetened condensed milk
- 1/2 cup of fresh lemon juice
- Whipped cream, for serving
Instructions
- Preheat the oven to 350 degrees F.
- Crush the saltine crackers into fine crumbs and mix with 1/3 cup of sugar and the melted butter.
- Press the crumb mixture into a 9-inch pie plate, forming a crust along the bottom and up the sides.
- Bake the crust for 15 minutes, then let it cool completely.
- In a bowl, whisk the egg yolks with the sweetened condensed milk and lemon juice until well combined.
- Pour the filling into the cooled crust and bake for 10 minutes, until the filling is set.
- Let the pie cool to room temperature, then refrigerate for at least 4 hours or overnight.
