- 2 boneless, skinless chicken breasts, cooked and shredded
- 4 cups mixed salad greens
- 1 red bell pepper, thinly sliced
- 1 cup shredded carrots
- 1/2 cup chopped green onions
- 1/4 cup chopped cilantro
- 1/4 cup sliced almonds
- 1/4 cup crispy chow mein noodles
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked and shredded chicken, mixed salad greens, red bell pepper, shredded carrots, green onions, cilantro, almonds, and chow mein noodles.
- In a small bowl, whisk together the rice vinegar, soy sauce, honey, sesame oil, ginger, garlic, salt, and pepper to make the dressing.
