  • In the same saucepan, combine the cooked rice, 4 cups of whole milk, 1/2 cup of white sugar, and 1/2 teaspoon of ground cinnamon. Bring to a simmer over medium heat, stirring frequently.
  • Reduce the heat to low and continue to cook for 20-25 minutes, stirring occasionally, until the rice is tender and the mixture has thickened to a creamy consistency.
  • Remove the saucepan from the heat and stir in 1/2 teaspoon of vanilla extract. If using, add 1/2 cup of raisins at this point.
  • Transfer the arroz con leche to a serving dish or individual bowls, sprinkle with a little extra ground cinnamon if desired, and let it cool for a few minutes before serving. Enjoy warm or chilled.
