Instructions

  • In a medium saucepan, combine 1 cup of white rice, 4 cups of whole milk, 1/2 cup of white sugar, 1/2 teaspoon of ground cinnamon, and 1/4 teaspoon of salt.
  • Bring the mixture to a gentle boil over medium heat, stirring frequently to prevent the rice from sticking to the bottom of the pan.
  • Reduce the heat to low and simmer for 30-35 minutes, or until the rice is tender and the mixture has thickened, stirring occasionally.
  • Remove the saucepan from the heat and stir in 1 teaspoon of vanilla extract. If using, fold in 1/2 cup of raisins at this point.
  • Transfer the rice pudding to a serving dish or individual bowls, sprinkle with a little extra ground cinnamon for garnish if desired, and let it cool for a few minutes before serving.
