- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder

- 1/2 cup unsalted butter, melted

- 1 1/2 cups diced apples (such as Granny Smith or Honeycrisp)
- 1/3 cup packed brown sugar
- 1/3 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 3 tablespoons unsalted butter, cold
Instructions
- Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease with non-stick cooking spray.
- In a large bowl, whisk together 2 cups of flour, granulated sugar, baking powder, and salt.
- In a separate bowl, mix together melted butter, eggs, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced apples.
- In a small bowl, combine brown sugar, 1/3 cup flour, and cinnamon. Cut in 3 tablespoons of cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Fill each muffin cup about 2/3 full with the batter. Sprinkle the streusel topping over each muffin.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
