  • In a separate bowl, mix together melted butter, eggs, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced apples.
  • In a small bowl, combine brown sugar, 1/3 cup flour, and cinnamon. Cut in 3 tablespoons of cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  • Fill each muffin cup about 2/3 full with the batter. Sprinkle the streusel topping over each muffin.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
