Ingredients
- 2 cups all-purpose flour
- 1/3 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 2/3 cup milk
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups diced apples (peeled and cored)
- Vegetable oil for frying
- 1 cup powdered sugar
- 2-3 tablespoons milk
Instructions
- In a large bowl, whisk together 2 cups of flour, 1/3 cup sugar, 1 tablespoon baking powder, 1/2 teaspoon salt, and 2 teaspoons ground cinnamon.
- In a separate bowl, mix 2/3 cup milk, 2 eggs, and 2 teaspoons vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced apples.
- In a large, heavy-bottomed pot, heat 2 inches of vegetable oil to 375°F (190°C).
- Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes per side. Be careful not to overcrowd the pot.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
- In a small bowl, whisk together 1 cup powdered sugar and 2-3 tablespoons of milk to make a glaze.
- Drizzle the glaze over the warm fritters and serve immediately.
