Instructions

  • In a large bowl, whisk together 1 1/2 cups of flour, 1/2 cup of rolled oats, 2 tablespoons of brown sugar, 2 teaspoons of baking powder, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of salt.
  • In a separate bowl, mix 1 1/4 cups of milk, 1/4 cup of unsweetened applesauce, 1 large egg, and 1 teaspoon of vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced apple.
  • Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  • Cook until bubbles form on the surface, then flip and cook until browned on the other side, about 2 minutes per side.
