Instructions

  • In a saucepan, combine 2 cups of whole milk, 1 cup of heavy cream, and 3/4 cup of granulated sugar. Heat over medium heat, stirring occasionally, until the mixture reaches a simmer. Remove from heat.
  • In a separate bowl, whisk together 1/2 cup of almond paste, 1/2 teaspoon of almond extract, and 1/4 teaspoon of salt until smooth.
  • Gradually whisk the warm milk mixture into the almond paste mixture until well combined.
  • Cover and refrigerate the mixture for at least 4 hours or overnight until completely chilled.
  • Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes, or until the gelato reaches a soft-serve consistency.
  • During the last few minutes of churning, add in 1/2 cup of chopped almonds and continue to churn until evenly distributed.
  • Transfer the gelato to a freezer-safe container, cover, and freeze for at least 2 hours or until firm.
  • Serve the almond gelato in scoops and enjoy!
