  • In a large mixing bowl, combine 1 cup of almond butter, 1/2 cup of white sugar, and 1/2 cup of brown sugar. Mix until well combined.
  • Add 1 egg and 1 teaspoon of vanilla extract to the almond butter mixture. Mix until smooth.
  • Stir in 1/2 teaspoon of baking soda and 1/4 teaspoon of salt until fully incorporated.
  • Scoop the cookie dough using a tablespoon and roll into balls. Place the balls onto the prepared baking sheet, leaving space between each cookie.
  • Using a fork, gently press down on each cookie to create a crisscross pattern.
