Ingredients
- 1 cup almond butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine 1 cup of almond butter, 1/2 cup of white sugar, and 1/2 cup of brown sugar. Mix until well combined.
- Add 1 egg and 1 teaspoon of vanilla extract to the almond butter mixture. Mix until smooth.
- Stir in 1/2 teaspoon of baking soda and 1/4 teaspoon of salt until fully incorporated.
- Scoop the cookie dough using a tablespoon and roll into balls. Place the balls onto the prepared baking sheet, leaving space between each cookie.
- Using a fork, gently press down on each cookie to create a crisscross pattern.
- Bake in the preheated oven for 8-10 minutes, or until the edges are golden brown.
- Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
