Ingredients
- 1 lb pork shoulder, thinly sliced
- 1/2 cup pineapple juice
- 1/4 cup orange juice
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/4 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
- 1/2 onion, thinly sliced
- 1/2 cup chopped fresh pineapple
- 8 small corn tortillas
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- In a large bowl, combine the pork shoulder, pineapple juice, orange juice, garlic, cumin, paprika, oregano, cinnamon, cloves, salt, and black pepper. Mix well to ensure the pork is coated in the marinade. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated pork and sliced onion to the skillet. Cook for 8-10 minutes, or until the pork is cooked through and caramelized, stirring occasionally. Add the chopped pineapple and cook for an additional 2-3 minutes.
- While the pork is cooking, warm the corn tortillas in a separate skillet over medium heat for about 30 seconds on each side.
- To assemble the tacos, place a spoonful of the cooked pork and pineapple mixture onto each tortilla. Garnish with chopped cilantro and a squeeze of fresh lime juice.
