Al Pastor Tacos
Created by: Howcan Team
Ingredients
- 1 lb pork shoulder, thinly sliced
- 1/2 cup pineapple juice
- 1/4 cup orange juice
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/4 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
- 1/2 onion, thinly sliced
- 1/2 cup chopped fresh pineapple
- 8 small corn tortillas
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- In a large bowl, combine the pork shoulder, pineapple juice, orange juice, garlic, cumin, paprika, oregano, cinnamon, cloves, salt, and black pepper. Mix well to ensure the pork is coated in the marinade. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated pork and sliced onion to the skillet. Cook for 8-10 minutes, or until the pork is cooked through and caramelized, stirring occasionally. Add the chopped pineapple and cook for an additional 2-3 minutes.
- While the pork is cooking, warm the corn tortillas in a separate skillet over medium heat for about 30 seconds on each side.
- To assemble the tacos, place a spoonful of the cooked pork and pineapple mixture onto each tortilla. Garnish with chopped cilantro and a squeeze of fresh lime juice.
- Serve the Al Pastor Tacos immediately and enjoy!
Al Pastor Tacos have a rich history that dates back to the 1920s when Lebanese immigrants brought their shawarma cooking technique to Mexico. This flavorful dish features marinated pork cooked on a vertical spit, similar to the method used for shawarma. The pork is typically seasoned with a blend of dried chilies, spices, and pineapple for a sweet and savory flavor. The dish gained popularity in the streets of Mexico City, where taqueros would slice the tender, juicy meat and serve it in warm tortillas with onions, cilantro, and a squeeze of lime. Today, the best Al Pastor Tacos can be found in Mexico City, particularly in the neighborhood of Condesa. The key to perfecting this dish lies in the marination process and the method of cooking the pork on a vertical spit, allowing the flavors to meld and the meat to caramelize beautifully. For a unique twist, some chefs use alternative proteins such as chicken or beef, while others offer vegetarian versions using marinated mushrooms or jackfruit. Whether enjoyed from a street vendor or a renowned restaurant, Al Pastor Tacos continue to be a beloved staple of Mexican cuisine.
