Ingredients
- 2 cups of cooked white rice
- 1/2 pound of chicken, cut into bite-sized pieces
- 1/2 cup of soy sauce
- 1/4 cup of vinegar
- 1 tablespoon of minced garlic
- 1 teaspoon of whole peppercorns
- 2 bay leaves
- 1 tablespoon of cooking oil
- 1/4 cup of water
- 1 tablespoon of brown sugar
- 1/4 cup of chopped green onions for garnish
Instructions
- In a bowl, marinate the chicken with 1/4 cup of soy sauce and 1/4 cup of vinegar for 15 minutes.
- In a large pan, heat 1 tablespoon of cooking oil over medium heat.
- Add 1 tablespoon of minced garlic and sauté until fragrant.
- Add the marinated chicken and cook until browned.
- Pour in the remaining 1/4 cup of soy sauce, 1/4 cup of water, 1 teaspoon of whole peppercorns, 2 bay leaves, and 1 tablespoon of brown sugar.
- Simmer for 10 minutes or until the chicken is fully cooked and the sauce has thickened.
- Add 2 cups of cooked white rice to the pan and stir to combine with the adobo chicken.
