Ingredients
- 2 lbs chicken thighs, cut into serving pieces
- 1 head of garlic, minced
- 1 cup soy sauce
- 1 cup vinegar
- 1 cup water
- 3 bay leaves
- 1 teaspoon whole peppercorns
- 3 tablespoons cooking oil
- 1 tablespoon brown sugar
- Salt to taste
Instructions
- In a large bowl, marinate the chicken thighs with 3/4 of the minced garlic, soy sauce, and vinegar for at least 30 minutes.
- Heat the cooking oil in a large pan over medium heat. Add the remaining minced garlic and sauté until golden brown.
- Add the marinated chicken thighs and cook until lightly browned on all sides.
- Pour in the marinade, water, bay leaves, and whole peppercorns. Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
- Add the brown sugar and salt to taste. Simmer for an additional 10 minutes or until the chicken is tender and the sauce has thickened.
- Serve hot with steamed rice and enjoy!
